Ingredients: Sliced mushrooms, of any kind the better the quality and kind of mushroom the better the dish, 1 cup of merlot, fresh pearl onions white and red, garlic, shallots, butter , olive oil flour
Directions: salt and pepper your halibut portions, dredge in flour and sear on both sides until golden brown in olive oil and butter, add the whole peeled onions and saute until they caramelize slightly, add your shallots and chopped garlic along with the mushrooms saute until the mushrooms start to release their liquid, deglaze with the cup of merlot, this process should take about 15 to 20 minutes cover and cook over medium heat until fish is cooked through, serve and spoon the onions andd shrooms on top of the halibut along with the sauce
Other Notes: this dish has an unatural purple and brown color but taste delicious, a lot of people think that the red wine will over power the fish but it doesnt--trust me..
